SUR restaurant is located along the Green River in Taichung, in a building that once housed a 1950s soap factory. The design concept, “infinite continuation,” reflects the chef’s philosophy of culinary innovation and initiates a dialogue between contemporary design language and historical architecture. Original structural elements—circular columns, arched beams, and exposed concrete walls—are preserved, allowing the passage of time to become part of the space’s aesthetic. A wave-like ceiling symbolizes the flow of creativity, enhanced by layered lighting in three color temperatures that create a dynamic play of light and shadow. Five dining tables are arranged around an open kitchen, representing the outward expansion of culinary inspiration from a central source. The use of reclaimed Taiwanese cedar and traditional joinery craftsmanship infuses local culture into the dining experience. A wall of glass bricks at the entrance serves as a transitional threshold, guiding guests across time into a contemporary expression of memory, creativity, and the senses. SUR is not merely a restaurant—it is a cultural space that bridges the past and the future.
